Baker's Patch: Gluten Free Whoopie Pies

It was a dark and rainy morning...

Ready for work and about to leave, I realized I am going to make these for the students today. Although I am a "Made without Gluten" Baker, you can certainly use good old All-purpose flour.

I tend to think the "Gluten Free" movement is more of a fad than a necessity, it is always nice to have options and choices. In our bakeshop, we primarily use a product called "Cup 4 Cup". It works amazingly well, but is relatively new to the market. Developed by SuperChef Thomas Keller, Cup 4 Cup is increasingly available. We order it in 25 pound bags, but it is also available on Amazon.com. Simply substitute the Cup 4 Cup in exact amounts for your traditional recipes.

Here is my recipe for the whoopie pies. Make them in large batches, they go quickly!
